The cost of food products always "bites off" a fairly decent percentage of budgetary funds, and the hope for a decrease in prices for necessary food products melts in proportion to the increase in these very prices. What can replace expensive food products?
The habitual diet makes it necessary to spend excessively on its complete set, regardless of the increase in the price of the usual foodstuffs. It is difficult to deny yourself your favorite dishes, even if the price of ingredients for them has increased significantly. But it is quite possible to reduce the cost of the food ration if you apply a sufficient amount of ingenuity, restrain your habits a little and show some curiosity about the taste of unfamiliar and unusual food products.
If you are not a vegetarian, then meat products are your main spending. What is useful in meat is protein and iron. The protein component of a meat dish is quite capable of replacing legumes. Lentils are expensive, so peas and inexpensive beans will supplement your protein cravings. These same foods are rich in iron, and will not give the opportunity to develop iron deficiency anemia. If you miss meat - eat eggs (boiled, fried, in the form of an omelet - any of the recipes for their preparation will do). If you want to imitate a meat dish or meat filler for salad, pie, casserole - fry mushrooms and onions.
Oatmeal and buckwheat porridge are quite competitive with meat dishes, and by adding liver, kidneys or heart (inexpensive meat ingredients) to the diet, you can endlessly save on full-fledged meat. Traditionally, the micronutrient iron can also be obtained by eating seaweed (you also get iodine in the load) or pumpkin seeds (replenishing your body with zinc for everything else).
One of the cheapest meat dishes is meat terrine, in other words, jellied meat. Despite the fact that meat is present in the jellied meat, the total volume of the product can be increased by almost any amount of jellied broth, which is much cheaper than the meat itself, on the basis of which it is prepared.
Cheese is an expensive and beloved product, but you can also save money on cheeses if you replace them with feta cheese. Cheese is a primordially salty product, but more natural than any cheese of questionable composition. There are varieties of feta cheese where a not too concentrated saline solution is used. The salinity of feta cheese can be reduced by first removing it from the brine and keeping it in a bowl with plain water (1-3 days).
Those who like to eat fruits that are out of season or are very expensive imported all year round can use a compote from frozen or canned fruits. You should not worry about the lack of vitamins in the compote, since there are no vitamins in winter and spring and in raw fruits.
You should take care of cheap vegetables from summer and autumn - you can freeze almost anything in the freezer: bell peppers, beets and carrots (finely chopped), greens, green beans, peas, broccoli and cauliflower (disassemble into forks), Brussels sprouts. In order not to yearn for fresh vegetable salads, prepare sauerkraut for future use, it is a more useful vegetable component in the diet than tomato-cucumber winter salad.
Frozen vegetables are useful not only for salads and side dishes, but also for making vegetable soups - a very economical and satisfying dish (if you cook them thick enough).
It is worth noting that any dish prepared independently at home is much cheaper than a similar purchased one.
