Diseases of the pancreas are difficult to treat, but they are no less difficult to experience. The complexity of nutrition in case of pancreatic disease lies in the fact that carbohydrates and fats drop out from the diet - those substances that the pancreas is designed to break down. That is, in order to release the pancreas from the load during the illness, it is necessary to release it from "work".
A person suffering from a pancreatic disease must learn to eat a minimum of foods rich in carbohydrates and fats and consume foods with minimal doses of sugars, starch, and fats in all their manifestations.
Due to the fact that the pancreas will not stop its functions during treatment that is it will continue to participate in digestion processes, the task of the diet for diseases of the pancreas is reduced to a decrease in the frequency of enzyme production, that is, to practical fasting. This is one of those cases where fasting as a form of treatment is justified.
In order not to disturb the pancreas and not to irritate the intestinal receptors, which signal the beginning of its secretory function, in addition to sweet foods, they exclude sour, salty and bitter tastes (in other words, spices) from the diet.
A justified question arises - what, then, to eat, if practically everything falls into the described categories? Diet for pancreatic disease is based on several rules:
- On a fresh diet - this means that products will have to be consumed natural and not flavored with any flavoring additions;
- On crushed food - ground with a meat grinder, whipped with a blender, very finely chopped, on mostly liquid dishes;
- On steam, boiled and baked dishes;
- On rare and timed meals.
The essence of the diet for diseases of the pancreas is to create an opportunity for the regeneration of organ tissues. In order for the pancreas to participate as little as possible in the processes of digestion, fasting is necessary, rare meals are strictly in time. And in order for the pancreas to secrete enzymes as little as possible, an easily digestible food is needed that does not require a long digestion process.
It seems that there is nothing to eat, but there is enough food for the duration of the pancreas treatment. The main task of the patient is to learn how to alternate these dishes and thereby give himself pleasure, albeit modest in taste, but still complete nutrition.
What can you eat while treating your pancreas?
- Porridge (boiled): rice, buckwheat, pearl barley, oatmeal.
- Only durum wheat pasta.
- Casseroles made from vegetables, cottage cheese, hard pasta, low-fat meats (turkey, chicken, veal, rabbit), lean fish and seafood.
- Puree soups, cream soups (prepared from any prepared vegetable soup by whipping it in a blender or mixer).
- Put meat in all dishes (including casseroles and soups) ground or use it in the form of pate, cutlets, meatballs, meatballs, cabbage rolls stuffed with bell pepper meat.
- Replace bread and any pastries with biscuits, unleavened crackers or crispbread.
- Consume milk and dairy products with minimum fat content (exclude butter, sour cream, cream, fatty cheeses, ready-made curd masses, glazed curds). Eat cottage cheese and cheeses with a minimum percentage of fat or fat-free.
- Egg dishes (you can exclude the yolk from eating) - steamed omelet, boiled eggs, poached eggs.
- Vegetables with a minimum amount of sugars: cucumbers, tomatoes, lettuce cabbage, kohlrabi cabbage, Brussels sprouts, cauliflower, broccoli, zucchini, eggplants. Vegetables are eaten baked, boiled or steamed.
- Do not forget about the minimum of salt in the composition of the dishes.
- Consume a lot of liquid instead of a rare meal: degassed water, unsweetened teas, fresh and dry fruit compotes with a minimum of sugar.
In case of diseases of the pancreas, it is strictly forbidden to consume alcohol and alcohol-containing products (for example, baked goods with rum or cognac, sweets with alcohol filling), sweets, all types of sweet yeast baked goods made from wheat flour, puff pastries, pizza, juices, smoothies, creams , preserves, ice cream, lemonade, deep-fried dishes (including french fries, chips, whites, pasties and other types of fried dough, deep-fried meat and fish, deep-fried vegetables, etc.), smoked meats, fruits and berries high in sugars (grapes, pears, peaches, apricots, pineapples, plums, bananas, melons, watermelons, strawberries, strawberries, raspberries, sweet apples), animal fats (lard, lard, fish oil).
