Diet for vascular atherosclerosis.
Atherosclerotic lesions of blood vessels are the scourge of our time. Passion for fatty and fried foods cannot but leave traces in the body, especially when there is also a predisposition to atherosclerosis (genetic, hormonal, autoimmune).
The release of lipoproteins (fats) outside the cellular structures and deposition on the walls of blood vessels is similar to the process of tissue calcification, when metabolic disturbances cause salt crystals to precipitate on the surface of tissue structures. Both types of disorders require adherence to dietary rules, and, in particular, atherosclerotic changes in the vascular wall requires limiting fat intake.
But the body cannot do without fats, because it is a source of energy, a supply of vital substances. For this reason, following a diet for vascular atherosclerosis with restriction of fat intake, you will not have to categorically abandon their presence in the diet, but find a middle ground between healthy fats and harmful sources of cholesterol (and therefore a building material for atherosclerotic plaques).
What fats will have to be excluded from the diet categorically with atherosclerosis or a tendency to it? These are refractory animal and vegetable fats: lamb fat, pork fat, beef fat, goose fat, duck fat, palm oil, coconut oil.
What fats can be used for atherosclerosis: vegetable oil (sunflower, olive, corn), fish oil (refers to liquid fats), milk fat.
The substance that is called bad cholesterol is not just in any fat, but in its solid fractions, which are responsible for the refractory property. Refractory fat and oil are therefore harmful if the body is prone to atherosclerosis, because at body temperature (36, 6 degrees Celsius) they do not melt, but are deposited in the interstitial space.
Foods rich in solid fat fractions (per 3.5 ounces) are egg yolk (about 1500 mg cholesterol), black fish caviar (340-350 mg cholesterol), liver (about 300 mg cholesterol), cheeses (160-200 mg cholesterol), heart (at least 200 mg of cholesterol), chicken skin (150-200 mg of cholesterol), bone marrow (100 mg of cholesterol).
Nutrition for vascular atherosclerosis and for the prevention of atherosclerosis is formed, taking into account the quantitative indicators of cholesterol in products:
- First courses are not cooked in chicken or beef broths, but in vegetable and fish broths.
- Meat and poultry are boiled, steamed or stewed, and boiled chicken is eaten without the skin.
- When preparing dishes with eggs, you can separate the egg components and prepare, for example, salads or egg white omelets.
- From dairy products, it is preferable to use separated dairy products: low-calorie milk, kefir and sour cream (or completely skimmed).
- Cheese and feta cheese are replaced with fat-free cottage cheese, which can also be smeared on a sandwich and added to salads for taste. The cheese flavor can be replaced by almost 100 percent yeast additive (nutritional yeast).
- Instead of a butter and cheese sandwich, you can eat an avocado wedge sandwich - this is a very healthy fat-containing product.
- Vegetables, meat, deep-fried fish are excluded from the diet, but it is quite possible to fry vegetables and fruits in vegetable oil.
- Frying is not used as a form of cooking for atherosclerosis. At prolonged high temperatures, oils and fats transform their structure and turn into harmful products.
- If you do not have the willpower to overcome the lack of fatty foods, it is better to eat a vegetable salad drizzled with vegetable oil. This is a healthy and safe dish for atherosclerosis.
- You will have to exclude sausages, shashlik, mayonnaise, dough cooked on lard, fatty minced meat dishes, smoked or boiled lard, bacon, cracklings, fatty meats from the diet.
Atherosclerosis is a deadly disease that blocks the lumens in the vessels of the circulatory system and disrupts blood circulation not only in peripheral organs, but also in the brain. Therefore, neglect of nutrition in atherosclerosis can cost lives.
