Carbohydrates in their usual sense are sweets, which are usually limited in most diets, both therapeutic and health improving. But a carbohydrate-free diet involves minimizing and cutting back on foods that aren't just overtly sweet. Sadly, but carbohydrates in large quantities are contained in all cereals, flour products, as well as vegetables containing a large amount of starchy substances - potatoes, sweet potatoes, corn, legumes.

All derivatives of starch and flour, whole grains and milled grains, added in large quantities to the composition of the product, convert it into carbohydrate. Of course, breaded meat products cannot be classified as high-carbohydrate foods, but meat, fish and seafood in a sufficiently thick layer of flour and starch batter will make the product carbohydrate. This also includes meat, fish products and seafood baked in a layer of dough. Some varieties of ham, sausages, sausages, sausages contain a high percentage of soybeans, starch, which also raises their status to carbohydrate-containing products.

For obvious reasons, adhering to a carbohydrate-free diet, you will have to refrain from cereal side dishes, pasta and potato side dishes, and legume side dishes. They will be replaced by side dishes of stewed and boiled vegetables - white cabbage, collard greens, broccoli, cauliflower, Brussels sprouts. Vinaigrette, vegetable and meat salads without ingredients such as corn, potatoes, sweet potatoes, legumes, boiled rice.

Adhering to a carbohydrate-free diet, you should not completely abandon carbohydrates, since they are necessary for the functioning of the brain and peripheral nervous system, for the full functioning of the muscular apparatus. That is, their content in the total amount of the eaten portion can vary in the range from 5% to 10%. For example, fruit and vegetable side dishes containing such products as pumpkin, carrots, beets, zucchini, melon, watermelon, radish, daikon, turnip, where carbohydrates exceed 10 grams. per 100 gr. product, it is quite appropriate as part of a carbohydrate-free diet.

Milk and dairy products of any fat content in all its manifestations will become a good substitute for carbohydrate products: kefir, cottage cheese, yogurt, fermented baked milk, sour cream, cream, cheeses, baked dairy products. The main thing is not to season these products with sugar, jam, sweet syrups, sauces with starch, flour (including soy flour) in the composition.

Meat, fish, seafood, eggs are the basis of a carbohydrate-free diet, vegetables and fruits will replace side dishes. Bread and grains are substituted in such a diet for nuts and seeds of various types.

It is worth knowing that when preparing dishes for a carbohydrate-free diet, do not seek to use dried or dried fruits and vegetables in their composition - they are always more caloric in terms of sugar content than fresh, boiled, baked or fried vegetables and fruits. In a carbohydrate-free diet, processing of fruits and vegetables is encouraged according to the principle of sautéing (light and quick frying in butter (butter or vegetable)) and blanching (treatment with boiling water or steam for a minute).

It must be remembered that, completely abandoning carbohydrate-containing foods, you can acquire such health disorders as a decrease in the general tone of the body, a slowdown in the processes of intellectual work of the brain, rapid fatigue, low physical activity, convulsive syndrome, muscle weakness, increased nervousness, excessive sleepiness, decreased resistance the body to infections (lowering the functions of immunity). All this will affect the performance and endurance of the body as a whole!

What is good about a carbohydrate-free diet is complete freedom in choosing how you prepare food for your meal. That is, vegetables and fruits fried in oil are acceptable in almost any quantity. The thing is that fats successfully perform a compensatory function in the body and take on some of the properties for which carbohydrates are responsible in biochemical processes. Therefore, you will not have to deny yourself butter or vegetable oil.

A carbohydrate-free diet does not last for a long time: no more than a month - three months, since you cannot permanently deprive the body of the substances conceived by nature for its life support.

There are a number of contraindications to a carbohydrate-free diet:

  • metabolic disorders, closely related to the need to obtain glucose in regular quantities;
  • pregnancy and lactation;
  • forced sports loads that must be withstood (professional sports);
  • chronic diseases during an exacerbation;
  • acute diseases, in the midst of which it is necessary to stop adhering to any strict diets, unless they are of a therapeutic nature;
  • diseases of renal, hepatic heart failure;
  • some forms of skin diseases in which strict non-therapeutic diets are generally contraindicated.

A diet without carbohydrates is difficult for those with a sweet tooth, but if this type of diet is given with ease, a weakened version of the diet can be transferred to a diet in the future.

It makes sense to follow a carbohydrate-free diet in seasons when there are a lot of cheap fruits and vegetables - late spring, summer or early fall. During periods when the immune system is weakened, and the body suffers from a lack of vitamins, a diet without carbohydrates will add health complications.
