When they talk about hot food, they mean that the temperature of the food will not be scalding for the mucous membrane of the mouth, esophagus and stomach. This can be the beginning of carcinogenesis in the tissues of the digestive tract.
High temperatures for the most part negatively affect the nutritional value of foods, and many nutrients are easily destroyed at high temperatures. But there are exceptions when it is the heating of the product that contributes to the change in its chemical composition in the direction of usefulness. For example, tomatoes, carrots, red peppers have another version of beta-carotene - lycopene, which, when these products are cooked, begins to be released from cells in large quantities.
In order to inhibit digestion and energy costs, it is worth eating cold food, but in order to improve digestion, heated food is the best way out.
