Carrot casserole with cottage cheese is more like a high-quality fruit and vegetable dessert. To make carrot casserole you will need:

  • 14 ounces of cottage cheese of any degree of fat content,
  • 7 ounces of grated raw carrots,
  • 3.5 ounces of prunes,
  • 3.5 ounces of dried apricots,
  • 3.5 ounces of raisins,
  • four tablespoons of semolina,
  • three tablespoons of flour,
  • 7 ounces 20% cream,
  • 3.5 ounces of sugar,
  • three eggs,
  • two tablespoons butter or melted butter,
  • vanillin to your taste,
  • one teaspoon of baking powder,
  • a pinch of salt.

Cottage cheese, eggs, cream, sugar, melted butter beat with a blender. Add baking powder, vanillin, salt, semolina and flour to the mixed, knead the dough until a uniform consistency. Cut dried prunes and dried apricots into small pieces, add grated carrots and raisins, mix fruits and carrots, evenly distributing them among themselves and mix into the prepared dough. Cover the baking dish with oiled parchment, fill it with the resulting dough and bake for 40-50 minutes in the oven at medium temperature.

Carrot soup

For soup, cake is used, which remains after receiving carrot juice. To prepare the soup, you need carrot cake in the amount of 18 ounces.

Finely chop one onion, finely chop one clove of garlic, grate ginger root (one teaspoon), add carrot cake, then sauté these ingredients in a pan in vegetable oil (3 tablespoons of vegetable oil).

Squeeze the juice from two oranges, and remove the zest from one of them. As spices, you will need fennel or cumin seeds (one teaspoon).

Carrot soup is prepared as follows: 35 ounces of water is poured into a saucepan, browned vegetables and spice seeds are added, salt to taste, brought to a boil and boiled for 15-20 minutes, then orange juice and orange zest are added, after five minutes the soup is removed from heat.

Carrot bread on the dough

Dough for carrot bread is prepared on dough, for this, dilute 0.35 ounces of dry yeast in 11 ounces of warm water and add 9 ounces of flour, stir the mixture evenly and set in a warm place for fermentation.

Meanwhile, in olive oil (3 tablespoons), fry finely chopped large onion, 3 finely chopped cloves of garlic, 11 ounces of carrot cake, seasoning from dry dill or caraway leaves, salt.

When the dough is suitable, add 9 ounces of flour to it and knead the dough. Put the prepared dough in a warm place and let rise one more time.

When the dough increases in volume, browned vegetables are mixed into it and evenly distributed over the entire mass of the dough. Cut the resulting dough into three parts, roll into loaves and put on a greased baking sheet, make cuts on the loaves and leave in a warm place for 20 minutes. Meanwhile, preheat the oven to 464 degrees Fahrenheit (240 degrees Celsius). Bake bread at a temperature of 464 degrees Fahrenheit (240 degrees Celsius) for 15 - 20 minutes.
