Help with beans poisoning.
Legume poisoning is not uncommon. Often, this kind of poisoning occurs by accident when legumes are not properly cooked before eating or when not enough baked bean flour products (bean cakes) get into the gastrointestinal tract.
Sometimes legume poisoning occurs due to ignorance of the peculiarities of their chemical composition and with the abuse of a raw food diet - the use of sprouted beans or other legumes for food.
Not all types of legumes are dangerous for a raw food diet. Various types of peas can be eaten without worrying about the consequences, but some types of legumes (in particular, beans) contain substances that are poisonous not only for the human body, but also for the body of animals (which are also better not fed with raw beans in order to avoid unpleasant consequences).
The chemical composition of legumes, like any representatives of the plant world, is rich in various biologically active components, and in particular, beans contain glycosides - organic substances. Glycosides can be chemically hazardous substances, such as the bean glycoside - phaseolunatin. In addition to glycosides, legumes contain other biologically active substances - lectins, which, when eaten raw, injure the intestinal walls. Dangerous glycosides and lectins, with a sufficiently long heat treatment of beans, lose their dangerous properties.
Bean poisoning signs:
- Beginning in 30 minutes or an hour and a half after the beans enter the digestive tract,
- Pain in the abdomen (intestines),
- Nausea,
- Vomiting that does not bring relief,
- Convulsive syndrome is possible,
- Diarrhea.
Bean poisoning proceeds without raising the temperature, but greatly changes the general condition of the victim. Symptoms of poisoning disappear after a few days, but to speed up the processes of detoxification of the body, it is necessary to wash the stomach, drink plenty of fluids, and do a cleansing enema.
You can prevent poisoning with beans or other dangerous types of legumes by observing the technology of preparing dishes from them and not being carried away by untested dishes for the raw food diet of vegetables.
