Scientists' active search for new food sources led to the creation of artificial meat, and alternative solutions in the food industry in the field of dairy products expanded the range of dairy products using vegetal milk.
The idea of obtaining milk from products of plant origin did not arise out of nowhere - a number of prerequisites led to its implementation:
- Many people do not metabolize casein in adulthood, a dairy protein of animal origin;
- There is a disease that prevents people from eating dairy products - lactose intolerance;
- In case of disturbed intestinal microflora (dysbiosis), there is not enough bacteria in the intestine that ferment dairy products (lactic acid bacteria);
- Sports nutrition requires a high concentration of protein shakes, and milk and animal protein are not useful for everyone;
- Among people who prefer vegetarian food, there are those who do not consume dairy products because of their animal origin;
- Overweight people need low-calorie dairy products;
- Religious fasting - abstaining from eating meat - requires foods of plant origin.
“Milk from vegetal products” - the very sound of this phrase evokes thoughts about what is in such milk from milk? Of course - nothing except for the appearance and taste, very reminiscent of cow's or goat's milk, but very fat-free.
What is vegetal milk made from? The most popular herbal products for making plant-based milk are nuts (almonds, coconut, cashews, hazelnuts), seeds (pumpkin seeds, sesame seeds), legumes (soybeans), and grains (oats, rice, wheat, rye).
The cost of dairy products directly depends on the cost of raw materials (nuts, seeds, soybeans, cereals). Soy milk turns out to be the cheapest, but it is also more popular. But any, even the most vegetal milk can be more expensive than animal milk.
Vegetal milk gained popularity not for its price, but for its nutritional qualities:
- Rich in trace elements,
- Rich in fatty acids,
- Lack of bad cholesterol,
- Lack of antibiotics and growth hormones,
- Lactose and starch free.
But vegetal milk is not shown to everyone: in people with nut allergies, milk made from nuts can provoke an allergic reaction.
Soy is a genetically modified product that can have unpredictable long-term consequences.
But with the general trend towards a healthy diet, vegetal milk has already taken a strong position and successfully competes with dairy products of animal origin.
