How to combine cutlets and diet?
Keeping a diet is not always easy due to the fact that many dishes fall out of the usual diet, which formed the basis of the daily menu. When it comes to cutlets, which are not a dietary dish in the conventional sense, nutritionists advise not to indulge in this dish, but to learn how to cook diet cutlets .
There are only three components that are unacceptable for a health or therapeutic diet in cutlets:
- fat (lard), which many people like to add to minced meat for juiciness and cheaper cutlets;
- eggs as a binding ingredient (harmful for egg allergies);
- spices that give minced meat a special taste.
Fried cutlets are also incompatible with the treatment or prevention of certain diseases, are inappropriate in sports nutrition and are not acceptable for a weight loss diet. But the process of frying a product such as a cutlet can be replaced with steam processing, stewing or baking. Cooking cutlets for a couple is the easiest, since any ingredients of minced cutlets tolerate steam treatment well and retain all their beneficial properties. Stewing cutlets is possible in a small amount of water (without oil) with the lid of the dish in which the cutlets are stewed closed (frying pan, stewpan, and similar dishes). You can bake cutlets in baking or casserole dishes, which is also convenient and practical in terms of the usefulness of the method of cooking cutlets.
How to do without adding spices to minced meat and at the same time give a pleasant taste to cutlets? For these purposes, there is onion or ready-made flavoring seasoning with a meat or cheese flavor. Onion, in addition to changing the taste of minced meat, successfully replaces fat (lard) in minced meat for cutlets and gives the same juiciness to the dish.
With the replacement of eggs in minced meat, the situation is more complicated, since eggs are an ideal component for gluing minced meat particles together. But even in this case, nutritionists and culinary specialists come to the rescue, who have figured out how to glue the components of minced meat for cutlets so that it does not fall apart when frying. Sticky properties are wheat or rye flour, oatmeal (ground into dust), potato or corn starch (cooked in advance), grated cheese. The volume of these sticky ingredients equals the volume of eggs broken into a glass.
To add medicinal properties to minced meat or to lighten the caloric content of minced meat components for cutlets, replacing part of the meat (fish, seafood) with less calorie products (of plant origin) helps:
- legumes,
- cabbage ( green colewort, headed cabbage, cauliflower, broccoli),
- root crops (carrots, beets, root parsley),
- tuber crops (potato, sweet potato),
- cereals (rice, oatmeal, buckwheat).
There are situations when for the successful treatment or prevention of a disease it is required to exclude meat dishes from the diet. If cutlets form the basis of nutrition, then in this case they are prepared from minced meat based on various types of cabbage, cereals, carrots and similar foods that are allowed for this disease.
To combine cutlets and a diet for the treatment of diseases, for the needs of sports or preventive nutrition, you need to show a little imagination in home cooking. Cutlets are the simplest meat product, the recipe of which is easy to modify for the benefit of one's own health.
